When we visited Taiwan a few years ago, we really enjoyed eating oyster omelettes. Typical recipes are quite high in carbs because they include Tapioca Flour or Potato Starch. Has anybody tried to make a keto version this? Perhaps using Konjac Powder (also called Konnyaku or Glucomannan) as a substitute for tapicoa / potato starch?
