In separate bowl mix eggs with mixer. Add yogurt and vanilla. Combine. Fold in dry ingredients and mix by hand. Place muffin holders in muffin tin and spray them with oil spray or they will stick. Divide batter between 12 cupcake holders. Bake at 400 for 18-20 minutes. Topping In bowl combine 1/2 c granulated sweetener of choice and 1 tsp cinammon. Melt 1/2 stick of butter. When cupcakes cool, dip in melted butter then roll top in sugar mixture. These are super yummy! Each cupcake is: 252 calories 7g protein 23g fat 2 net carbs [link] [comments] |
