Ingredients

  • 3 cups or 360g of assorted nuts or seeds of choice (we went with almonds, pecans, and walnuts - 120g each)*
  • 1/3 cup or 75g melted coconut oil
  • 1/3 cup or 64g Lakanto monk fruit sweetener
  • 2 tbsp or 42g honey*\*
  • 1/2 tsp or 1g cinnamon
  • 1/2 tsp or 3g salt

\If you are using smaller seeds like chia or hemp, we recommend adding them halfway through the bake time as they will brown much more quickly than larger nuts*\* You can omit the honey for lower carb granola and add an additional 2 tbsp of lakanto monk fruit sweetener. The honey helps the granola stick together to form clusters, but you can still achieve this to a small degree without it. Omitting the honey will drop the net carbs to about 2g (versus 5g) per serving.*

Instructions

  1. Preheat your oven to 300ºF.
  2. Add your nuts to a food processor and blitz them to your desired consistency. I like to process about half the nuts first, then add the other half. This creates some smaller pieces (which will eventually stick together to form clusters) and some larger pieces. If you don’t own a food processor, add your nuts to a plastic bag and bash them with something. We used a meat pounder.
  3. In a large bowl, add the nuts, melted coconut oil, Lakanto sweetener, honey, cinnamon, and salt. Mix with a spatula until all ingredients are fully incorporated.
  4. Evenly spread your nut mixture on a parchment-lined baking sheet.
  5. Bake for 20 minutes.
  6. Remove your nuts, add any desired smaller seeds and give them a mix (still mix even if you aren’t adding anything).
  7. Return to oven for an additional 15-20 minutes or until golden brown.
  8. Allow it to cool for an hour before storing it in a glass container.
