So I’ve been making keto simple syrup
1 cup Water 1/2 cup Erythritol 1/8 Tspn Xathan Gum
When I refrigerate it, it’s crystallizes and forms Small crystals that sink to the bottom (I’m assuming it’s the Erythritol forming together). Does this NEED to be refrigerated? Has anyone else had this experience or has tried not refrigerating? Any help is much appreciated!
