This isn't earth-shattering, but I whipped up a tasty lunch today so I thought I'd share:
LUNCH WRAPS
makes 2 wraps serving size: 2 wraps
Ingredients:
· 4 Crepini egg wraps
· 1 oz (about 2 Tbsp.) softened cream cheese, divided
· 1 oz. grated cheddar cheese. divided
· 2-1/2 oz sliced deli turkey (check sugar content!), divided
Directions:
- Smear half of the softened cream cheese along the middle of each double-layer crepini. Do this carefully, or they'll rip. These are just too thin to use single-layer.
- Sprinkle half of the cheddar (1/2 oz) over the cream cheese on each
- Divide turkey into 2 portions and roll up each one, placing it in the middle of the wrap
- Roll up each wrap and encase in aluminum foil
- Bake at 350 degrees for about 8 minutes, or until cheese melts
- Remove from oven, unwrap foil and allow to cool 1 minute
Net carbs -6 Protein - 22g Fat - 25g Calories - 357 kcal
