This isn't earth-shattering, but I whipped up a tasty lunch today so I thought I'd share:

LUNCH WRAPS

makes 2 wraps serving size: 2 wraps

Ingredients:

· 4 Crepini egg wraps

· 1 oz (about 2 Tbsp.) softened cream cheese, divided

· 1 oz. grated cheddar cheese. divided

· 2-1/2 oz sliced deli turkey (check sugar content!), divided

Directions:

  1. Smear half of the softened cream cheese along the middle of each double-layer crepini. Do this carefully, or they'll rip. These are just too thin to use single-layer.
  2. Sprinkle half of the cheddar (1/2 oz) over the cream cheese on each
  3. Divide turkey into 2 portions and roll up each one, placing it in the middle of the wrap
  4. Roll up each wrap and encase in aluminum foil
  5. Bake at 350 degrees for about 8 minutes, or until cheese melts
  6. Remove from oven, unwrap foil and allow to cool 1 minute

Net carbs -6 Protein - 22g Fat - 25g Calories - 357 kcal
