Serves a family of 4
1lb ground beef One steamable bag of cauliflower Half can of black beans Taco seasoning Onion/garlic seasoning if preferred 4 peppers cut on top. 1/2 c cheddar cheese Tomato juice
I cooked the cauliflower and ground beef together and chopped up the cauliflower into rice. Added beans and taco seasoning.
While this was cooking I cut the peppers and washed them and set them in my instant pot.
Once the filling is done I let it rest about 20mins. Then filled the peppers.
Added juice over top of the peppers gently then let the rest drain to the bottom.
Put in instant pot on vegetables for 5mins and a slow release.
However I’m sure baking these would be just as easy on 400 for about 10 mins.
Once they are done I toss some of that shredded cheddar cheese over top!
It does have your daily carb serving in this dish. But for those days you ate no carbs and are looking for some comfort food this is it. I only added beans and cauliflower because I’m doing 30-40g carbs per day. I’m diabetic and need the carbs to help with my insulin intake. Gradually lowering carbs day by day. :)
