I used the spice blend from Glen and Friends cooking but I don’t think the quantities I used are right, but they’re pretty darn close! Although it’s not perfect, I’ve tried using almond and coconut flours and they were just too chunky and mealy. Using whey protein isolate makes the coating crispier than KFC but I don’t have a pressure fryer to test if that will help soften the coating. Either way, fantastic result for keto KFC! I can’t wait to try the spice blend to make gravy next!

Ingredients

  • 1kg/2lbs Chicken Pieces, skin on
  • 90g/3oz Whey Protein Isolate
  • 60g/2oz Egg, beaten
  • 1/2 tsp Allspice
  • 1/2 tsp Clove
  • 1/2 tsp Thyme
  • 1/2 tsp Marjoram
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Ground Ginger
  • 1 tsp Coriander Seed
  • 1 tsp Sage
  • 3 tsp White Pepper
  • 3 tsp Black Pepper
  • 10g/0.35oz MSG
  • Oil, for deep frying
  • 150g/5oz Salt, for brining
  • Salt for seasoning

Method

  1. Add salt and 2 litres of water into a pot and bring to a simmer, stirring until salt is dissolved. Place chicken pieces in bags or in a sealed container with brine covering the chicken completely. Place in fridge overnight, up to 10 hrs
  2. Remove chicken from brine, rinse in cold water and pat dry with paper towel.
  3. Blend spices until finely ground then add protein powder and blitz until well combined
  4. Begin heating oil to around 350°F/180°C
  5. Preheat oven to 260°F/130°C
  6. Add beaten egg to chicken pieces and toss to coat
  7. Use preferred battering method (paper/plastic bag, batter device, tossing in bowl) for each batch just before it fries to ensure coating doesn’t become sticky
  8. Fry chicken in batches until golden brown and drain on a cooling rack on top of an oven rack
  9. Place in the oven for 15 minutes, or until the internal temperature reaches 165°F/75°C
  10. Allow to rest for 10 minutes
  11. Serve with (keto friendly) accompaniments

Makes around 10 pieces
