I’m having it for brunch but you could use it for any meal. Background is I love spicy food and I love eggs, so often I’ll make scrambled eggs with a small can of chipotle peppers (the cooked ones in the sauce). But something about it just doesn’t seem to really capture the flavors of both. Tried something new and it looks gross but the taste is amazing.
Four eggs (use six if you aren’t going to use Mayo)
Two cans of tuna
Two tablespoons of mayonnaise
Small can of chipotle peppers in adobo sauce (i used Pueblo lindo 7 Oz can) use half a can if you plan on consuming more carbs that day*
Dice the eggs and mix it all in. I didn’t cut up the peppers but you can if you want to.
Mix it up and observe how revolting it looks, then eat it and enjoy the flavor. Surprisingly good. The Mayo sort of counters the spice of the chipotle and adobo sauce, so that it’s tangy but not overpowering.
