The original post that I got the recipe from is here:
https://reddit.com/r/ketorecipes/comments/c8gwci/dark_chocolate_brownies/
I adapted the recipe as follows:
• 1/2 cup almond flour
• 1/3 cup dark cocoa
• 12 tsp (194g) butter, melted
• 3 eggs, room temperature
• 1/2 cup sweetener of choice
• 1/2 tsp baking powder
• 1 tsp vanilla essence (Although I used more, because my family loves vanilla)
• 2 oz dark chocolate (I used a 70% cocoa, lint hazelnut chocolate, but the original recipe called for 100% cocoa, which I didn't have)
Method:
,1. Add chocolate and butter to a bowl and melt in the microwave for 30 seconds. Set aside.
-
In another (Smallish) bowl, combine dry ingredients — flour, cocoa, sweetener and baking powder — and mix to combine.
-
In a large bowl, beat the eggs until they're light and fluffy. Add the vanilla essence once the eggs have been beaten.
-
Add the butter-chocolate mixture and mix with the eggs.
-
Gradually add the dry ingredients and combine well.
-
Bake at 350°F (180°C) for 15-20 minutes. I baked them for 15, but if your oven generally bakes slower, you might want to check every minute or 2 from 15 mins onwards.
The brownies should be soft in the middle.
I used whipped cream for the topping — sweetened very slightly for added flavour.
