One of my favorite ways to eat pancakes as a kid was with lots of real maple syrup. You can’t mistake that sweet sticky taste!

I remember soaking up my breakfast pancakes and waffles in it… that flavor still makes me drool a bit.

The problem is all the sugar and high fructose corn syrups in these pancake syrups. They are definitely not low-carb friendly.

But, being on the keto diet shouldn’t mean that you have to give up all of your favorite foods. Instead, you just need to find sugar-free ways to make them.

I already created some of the best low-carb pancakes. Now, all you need is this recipe for the sweet syrup you can pile on top!

If you have kids or live with other family members, this recipe is perfect for them too. It is well known that too much sugar isn’t healthy. This recipe is an easy way to cut back on how much sugar they eat.

Ingredients Needed For Keto Maple Syrup

There are really just a few easy ingredients in this syrup. All of them are really easy to find at your grocery store, too.

Sweetener

There are tons of different types of sugar-free sweeteners from which you can choose.

The only one that really works for this syrup is a brown sugar substitute. As it melts, it creates the perfect consistency and taste for the syrup.

Flavoring

Maple extract is a sugar-free flavoring that makes the syrup taste just like maple syrup. Add some vanilla for a well-rounded taste.

Xanthan Gum

Finally, you need xanthan gum to make it thicker!

If your syrup is too thin or runny, add a tiny bit more xanthan gum as this will give it the same mouth-feel as authentic maple syrup.

Quick Tips:

  • Use different extracts. You can create entirely different flavors and varieties. Try adding in some peppermint extract instead of maple for a peppermint syrup. Or, add a touch of orange extract for a fun breakfast surprise!
  • Store in a mason jar with a lid. This is the easiest way to store it since the lid makes it completely airtight. Keep it in the refrigerator for up to a month.
  • Do not use granular sweeteners. If you use a granular sweetener, it will give the syrup a gritty texture.
  • Add more water. If you think your syrup is too thick, use a tiny bit more water until it is the consistency that you like.

How To Make Keto Syrup For Pancakes

This syrup is so easy to make, that you’ll never go back to buying store-bought syrup again.

Make A Paste With Xanthan Gum

The very first step to making this low-carb maple syrup is to mix the xanthan gum with a small amount of the water. You want to create a thick consistency before you add the other ingredients.

Tip: Make sure it is well blended before you move to the next step.

Heat It In A Saucepan

Next, you’ll heat everything up in a saucepan on the stove to make sure it all comes together.

  1. First, heat up the water and brown sugar substitute.
  2. Then, add the xanthan gum mixture.
  3. Keep whisking this until it becomes as thick as you like it.

Add The Flavorings

When you think the maple syrup is thick enough, take it off the stove and add the maple and vanilla extracts.

Give it another quick stir, serve and enjoy!

Real maple syrup is not keto-friendly. It is another form of pure sugar and has way too many carbs to fit with a low-carb diet.

That is why I made this recipe. My keto-friendly maple (flavored) syrup has no carbs!

That’s right – there are zero net carbs in each serving.

How long does homemade syrup last in the refrigerator?

If you store this in an airtight container, it will stay fresh for up to a month in the refrigerator.

Can I make homemade syrup in the microwave?

Honestly, the best way to make this syrup is on the stove. You can control the temperature better and remove it from the heat as soon as it reaches the perfect consistency without it burning.

But, yes, it is possible to make this in the microwave.

When you begin heating everything up, do it in 30-second intervals, stirring it really well in between each one. If you keep a close eye on it like this, you can make it in the microwave without it burning or boiling over.

Instructions

  • Place ½ cup of the warm water in a small bowl and add the xanthan gum to it. Whisk quickly and continuously until thickened and well blended.

  • Add the rest of the water and the sugar substitute to a saucepan over medium heat on the stove. Once hot, whisk in the xanthan gum mixture until completely blended and smooth. Allow the syrup to thicken to your liking.

  • Remove the syrup mixture from the heat and stir in the maple and vanilla extracts. Let cool and serve or store in an airtight container in the fridge.
