I found this Keto Salad recipe which you can make in 10 minutes or less. Enjoy !!

You can customize it using your own favorite ingredients. Super easy recipe that is a perfect side dish to chicken, pork, beef, even hamburgers.

Ingredients:

  • 1/2 iceberg lettuce
  • 1 cup blue cheese dressing (homemade recipe below)
  • 4 bacon slices, cooked and chopped
  • 4 oz cheddar cheese, shredded
  • 2 eggs, chopped
  • 1/2 cup cucumber, peeled and diced
  • 1/2 cup tomatoes, diced

Instructions:

  1. Halve the iceberg lettuce from top to bottom. Slice the half into four wedges.
  2. Place on a plate and top with dressing (bottled or use the homemade Blue cheese dressing below), bacon, cheese, egg, cucumber, and tomato. Serve immediately.

Tip: You can assemble everything in advance and keep in your fridge until you are ready to assemble it.

Blue Cheese Dressing

To make blue cheese dressing, mix all ingredients together in a small bowl. Refrigerate until ready to use. If dressing thickens use cream, milk, or half and half until dressing reaches desired consistency. Adjust salt and pepper as needed.

  • 6 oz blue cheese, crumbled
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp garlic, minced
  • 1 tbsp chives
  • Pinch of salt and pepper
