sup /r/ketorecipes,
Hope you're all well. I got inspired to make a protein/meal bar from a fat bomb recipe I read online. I got to thinking..."If I just add some hemp seed meal / hemp seed, I'd have a pretty good ratio of fats and calories to digestible substance." Then that thought got me thinking... "Well, what if I just tried to take a fat bomb, add hemp seed products, and make it into a meal bar..." and so here we are.
You need to understand that I'm on a keto diet because I'm a terrible cook, okay? I'm bad. But I'm willing to put in a couple of weeks to make this happen. The only issue is that I don't know what the recipe could be!...
I do have some core ingredients in mind:
Hemp seed meal
Hemp seed hearts
Cacao powder
Almond flour (maybe)
The recipe for fat bombs I read used macadamia nut butter, and honestly, I'd like to substitute it. It also used sweeteners, and I think I'm just going to forego that. I'm thinking to add more protein I could add in a small amount of my protein powder: veggie elite protein, mocha flavor (pea and rice protein), but I think this would likely add a gross taste.
So, I'm looking at this and thinking about a few different angles:
- Fat bomb angle (chocolatey, fatty, calorie dense)
- If I replace the macadamia nut butter, what else could I use as a substitute to act as a liquid mixing agent to combine the cacao into? is MTC or coconut oil possible?
- Consistency angle
- Mealy, solid, bar-like consistency angle
- The hemp seed meal and the hemp seed hearts act as the main ingredients, but that's not enough substance to get any kind of mealy substance that would bake into a bar, as those two items alone don't leaven. I'm thinking of using almond flower as a base for the recipe? I don't know how to use almond flower well enough to bake anything with it.
- Mealy, solid, bar-like consistency angle
- Vegan, sugar free angle
- Ideally, I wouldn't use egg or sweeteners
- End product angle
- The end product I'd like to be a bar that I don't need to refrigerate. I don't want it to be an overly oily mess that will turn to a mush ball if it isn't kept at low temps.
Obviously, considering my background I don't have any ideas on how to make anything like this. It's a tall order. The question is...can it be done?
