Easy to make and easy to fool people into thinking it's a real banana bread, despite not having any bananas.

The original recipe called for a lot of mashed bananas, which sadly are not our friends on keto.

Enter courgette - also known as zucchini. You can easily use it to replace bananas in this recipe and with the added banana essence, you can easily trick people into believing this is a legit banana bread. Tested on 3 non-keto people - they were sure it's real bananas :-)

The trick is to ensure you peel and DE-SEED the courgettes. Then put them into a food processor and blitz into a pulp. Since courgettes have way more water than bananas, you'll have to squeeze some of that water out (in a cheese cloth, a sieve, or just be creative. Don't remove all the water though, just so that the pulp is less liquid.

Ingredients:

  • 500-550g of blitzed courgette (that's around 2 and half cups - weigh after removing the water). They have to be deseeded first - this is critical, otherwise the texture will be off.
  • 4 eggs
  • 1/2 cup (140g) of almond butter - I prefer smooth but crunchy will work too. Any other nut butter will be OK also.
  • 4 tbsp of melted butter or coconut oil
  • 1/2 cup of coconut flour or almond flour - I prefer almond flour or a mix of the two. Remember they absorb liquid differently, so amounts may need adjustments. The resulting batter should will be quite runny - this is normal.
  • 1 tbsp of cinnamon
  • 1 tsp of baking soda
  • 1 tsp of baking powder (2 tsp if you don't have soda)
  • 1 tsp of vanilla extract
  • a pinch of salt
  • 1 tbsp of banana essence/extract (I like the strong banana flavour - if you prefer something more subtle, use less). I often mix banana essence with a sucralose-based banana flavour drops but that's optional.
  • sweetener of choice to taste - The original recipe had no added sugar since the bananas provided sweetness. But in the keto version we have to add some sweeteners. I used a mix of sukrin gold and sucralose drops (I don't mind artificial sweeteners), but you can use just erythritol, stevia, allulose, whatever you prefer.
  • Walnuts, hazelnuts, keto chocolate chips - whatever additions you like

Method:

  1. Blitz the peeled and deseeded courgettes/zucchinis in a food processor. You want a smooth pulp. Remove some of the water (but not all).
  2. Combine the pulp with eggs, vanilla, nut butter, banana essence and sweeteners. You can use the same food processor or a handmixer.
  3. Once all combined, add the flour of choice, cinnamon, baking powder, baking soda and salt.
  4. Mix everything until well combined, add your nuts/choc chips if using.
  5. Pour the batter into greased loaf pan (9x5 for example - you may need to split it into two portions if your tin is too small). The bread will rise during baking.
  6. Decorate the top with walnuts or pecans if you want
  7. Put into your preheated oven at 180C (350F). Bake for 55-60 minutes or until a toothpick comes out clean.
  8. Remove from oven and flip into a cooling rack. Allow to cool down fully before serving.

The bread shouldn't be too sweet (unless you want it too). It will be very moist when baked, making it look and taste as if there were actual mashed bananas in it.
