Who doesn’t love a good brownie? These mint chocolate brownies are keto-friendly, require only 15 minutes of prep time, and will definitely satisfy your sweet tooth!
Be sure to soften the cream cheese in advance. You can let it sit on the counter for an hour or so. If you forget to do that, you can cut the cream cheese into 1-inch cubes and place the cubes on the counter for about 10 minutes to soften.
How To Make Mint Chocolate Brownies
These easy to make and yummy mint chocolate brownies will be ready before you know it! Start by preheating the oven to 325 degrees. Spray an 8-inch baking dish with nonstick cooking spray.
Combine the almond flour, ⅔ cups Lakanto, cocoa powder, baking powder, and salt in a medium-sized bowl. Whisk the ingredients together to blend well.
Add the softened cream cheese, melted butter, eggs, and vanilla to the dry ingredients. Use an electric mixer to mix together until smooth. Gently fold in the chocolate chips. Pour the batter evenly into the prepared pan and smooth the top.
Next, combine all of the Mint Cream Cheese Layer ingredients in a food processor or high-speed blender. Process until smooth and the mint leaves are all very finely chopped. Pour the mixture over the top of the brownie batter and smooth into an even layer.
Bake the mint chocolate brownies for 40-45 minutes. You’ll probably notice the middle of the cream cheese layer will still be a little bit jiggly – don’t worry though, it will set as it cools. Let the brownies cool completely before cutting into 16 squares and serving.

- 3/4 cup blanched almond flour
- 2/3 cup Lakanto Powdered
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 3 oz cream cheese softened
- 1/4 cup unsalted butter melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup Lily's Baking Chips
Mint Cream Cheese Layer
- 5 oz cream cheese softened
- 1/2 tsp mint extract
- 1/4 cup mint leaves loosely packed
- 1/4 cup blanched almond flour
- 2 tbsp Lakanto Powdered
- 1 large egg
- 2-3 drops green natural food coloring optional
